Nanaimo students breaking out the mixing bowls in bid for Nanaimo bar record

Vancouver Island University hopes to set a record this weekend for the biggest Nanaimo bar.

Students and instructors will create a 1,100-pound no-bake dessert, complete with Graham cracker crumb crust, cocoa powder, nuts, coconut, custard and chocolate, according to a press release, in a fundraiser for new ovens for the culinary arts and professional baking and pastry arts programs.

Prep work has already begun, and the university will host a community event from 11 a.m. to 2 p.m. on Saturday, May 17 at the Windsor Plywood Trades Discovery Centre at the Nanaimo campus. The bar will be cut and served at noon.

The current record-holders are from Levack, Ont., who created a 529-pound bar in 2020.
